- 2 chicken breast
- 1 teaspoon curry powder
- 1 teaspoon cinnamon powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 whole egg
- 1 egg white
- 1/4 cup low fat drinking coconut milk
- 1/2 lemon juiced
- 3/4 cup whole wheat bread crumbs (I made my own)
- 3/4 cup dessicated coconut
- Olive oil to oil the baking sheet
- Preheat oven to 350 F
- Cut chicken breasts into strips
- Combine ingredients 2-5 and rub them all over the chicken strips
- Combine ingredients 6-9 in a bowl and mix it well (egg mix)
- Combine ingredients 10 & 11 and mix them together (bread crumb mix)
- Oil the baking sheet
- Dip the chicken strips in the egg mix then coat it with the bread crumb mix and lay it on the baking sheet.
- Repeat step 7 for the rest of the chicken strips
- Bake the chicken strips in the oven for 30-40minutes or until the chicken strips are golden & crispy
- 1 large mango peeled and diced
- 1 avocado diced
- 1 yellow onion diced
- 1 big handful cilantro chopped
- 1/2 pear chopped
- 1/2 lemon juiced
- 2 teaspoon honey
- 1/2 teaspoon black pepper

Yes, I have a lot of goals but this is one of those that I'm really passionate about. Working on achieving it does not seem like work at all. In fact, I enjoy every minute of it. I've always love playing with it since I was a kid (without my mom's permission for using her stuff of course) but it faded behind school and work. However, it was recently reignited when I started helping out MoofMoof build his/our business. Thus I'm going to work on it while still helping MoofMoof build his business.
So what is this wonderful goal that makes me go all musical and lalala? Makeup! I'm aspiring to become a makeup artist so I've been volunteering to do makeup for friends and people who needs makeup services. Last week was my first time doing makeup for people whom I don't know. It was exciting. The girls were a joy to work with and I had so much fun working with them. I'm very happy and satisfied with the results even though it may not be compared to the works of professionals yet. All in all it was a very rewarding experience. Here's what I did to Becky & Joanne for their homecoming:
